Spinach Bacon Quiche


This recipe is one of Forest's favorites.  We make it often!  I created this recipe from a variety of other quiche recipes.  Hope you like it!


Spinach Bacon Quiche


6 slices cooked bacon
10 oz. fresh baby spinach (or you can use thawed frozen)
1/4 cup mayo
1/4 cup sour cream
1/2 cup milk
2 eggs beaten (or egg substitute)
1 T. cornstarch
1/3 cup diced green onion
1/2 cup shredded mozzarella cheese
1/2 cup shredded sharp cheddar cheese
dash black pepper
1 9" deep dish pie shell (pre-cooked according to package)


Pre-heat oven to 350º F. Pre-cook pie shell according to package directions.  I usually use the Publix brand refrigerated pie crusts and pre-cook the crust for about 10 minutes in a 350º oven.


Cook bacon.  Crumble when cool.


While bacon is cooking, wilt spinach in skillet over medium heat.  I use a little sprinkle of oil in the pan.  If using frozen spinach, make sure to squeeze spinach dry.


In a large bowl blend mayo, sour cream, milk, eggs, and corn starch.


Combine remaining ingredients and pour into pre-cooked pie crust.


Bake at 350º for 45 minutes or center is cooked-through.
